Tea standard samples are the benchmark for tea product quality control. Understanding inherent differences in Chinese national standards Lapsang Souchong black of different grades is crucial scientific development standardization work. In this study, that meet was selected as research object. The aroma characteristics were comprehensively analyzed through sensory evaluation, electronic nose, and HS-SPME-GC-MS (headspace solid-phase microextraction gas chromatography–mass spectrometry). findings indicate higher-grade has a higher evaluation score. results nose analysis volatiles with mainly terpenoids nitrogen oxides. show odor super-grade floral fruity, these substances include D-Limonene, 3,7-dimethyl-1,6-octadien-3-ol 3-Hydroxymandelic acid, ethyl ester. primary first-grade floral, sweet, woody, green, key contributing compounds including 2-Furanmethanol, 1-Octen-3-ol, 5-ethenyltetrahydro-α,α,5-trimethyl-cis-, 4,5-di-epi-aristolochene. main second-grade herbal scent, 3,7-dimethyl-1,6-octadien-3-ol, 2,3-dimethylthiophene, Dihydroactinidiolide, Naphthalene-1-methyl-7-(1-methylethyl)-. It worth noting contain large amount phenolic substances, which related to smoking process during processing. This study lays solid foundation preparation construction system.

An tea is highly valued for its unique post-fermentation process, which enriches flavor and aroma. In this study, the digestion fermentation characteristics of polysaccharides (ATPSs) were investigated in vitro. The results indicated that molecular weight sugar content ATPSs remained unchanged during simulated saliva, gastric, small intestinal but reduced fermentation, suggesting could pass digestive system be metabolized by gut microbiota. Chinese post-fermented teas are produced through special fermentation by microorganisms, with fungi significantly contributing to their flavor and sensory characteristics. Here, the fungal community structure function were investigated using Illumina HiSeq sequencing of ITS rDNA region across different teas, including Fuzhuan, Qingzhuan, Tianjian black, Liupao, raw ripened Pu-erh. Additionally, headspace solid-phase microextraction gas chromatography–mass spectrometry (HS-SPME-GC–MS) technology was used compare volatile components tea samples, moisture content, pH, total nitrogen, carbon–nitrogen ratio, sulfur measured. All samples slightly acidic, pH values 5.56–6.43, Ascomycota most dominant phylum, representing over 90% relative abundance. However, there significant differences at genus level in six typical teas. Aspergillus Fuzhuan (91.16%), Qingzhuan (54.89%), (64.11%), Liupao (47.43%) whereas Debaryomyces Blastobotrys genera (35.67%) (78.88%) Pu-erh tea, respectively. A functional prediction analysis revealed that gene functions involved metabolism. 26 main detected, which differed composition among samples. This is first comparative communities results will aid design better culturing strategies for specific species influence on aroma types

Dark tea, rich in nutricines including tea polyphenols and free amino acids, is a kind of post-fermented tea. The potential application against oxidative damage senescence, which drives animal health maintenance disease prevention, has attracted considerable interest. Interestingly, mRNA sequence analyses further revealed that may catalyze intracellular relevant substrates synthesize antioxidants through synthetic metabolic pathways. These results suggest worth exploration as dietary supplement for prevention related diseases.
