Abstract This study examines the effectiveness of seven drying methods applied to bergamot peels, encompassing hot air, microwave, infrared‐assisted freeze, infrared, sun, and oven drying. All samples exhibited moisture content water activity levels within acceptable range for dry foods. effectively transformed peels into powdered form, yielding comparable results. Each method offers distinct advantages disadvantages, choice should be based on desired properties final product. The highest ascorbic acid was found in freeze‐dried air‐dried (>400 mg/100 g), whereas sun‐dried had lowest (89.58 g). Infrared‐dried total phenolics flavonoids (193.40 530.14 g, respectively), attributed reactions induced by elevated temperatures. carotenoids were higher (54.12 g) compared other (<27 Microwave‐dried 5‐hydroxymethylfurfural (73.06 naringin (1568.70 Although infrared good particle density, porosity, fluidity, freeze‐drying most effective, retaining bioactive compounds. Alzheimer's disease (AD) is a major global health problem today and the most common form of dementia. AD characterized by formation β-amyloid (Aβ) plaques neurofibrillary clusters, leading to decreased brain acetylcholine levels in brain. Another mechanism underlying pathogenesis abnormal phosphorylation tau protein that accumulates at level aggregates, areas affected this pathological process are usually cholinergic neurons cortical, subcortical, hippocampal areas. These effects result cognitive function, atrophy, neuronal death. Malnutrition weight loss frequent manifestations AD, these also associated with greater decline. Several studies have confirmed balanced low-calorie diet proper nutritional intake may be considered important factors counteracting or slowing progression whereas high-fat hypercholesterolemic predisposes an increased risk developing AD. The gut microbiota is a diverse bacterial community consisting of approximately 2000 species, predominantly from five phyla: Firmicutes, Bacteroidetes, Actinobacteria, Proteobacteria, and Verrucomicrobia. microbiota's species create distinct compounds that impact the host's health, including well-known short-chain fatty acids. These are produced through breakdown dietary fibers fermentation undigested carbohydrates by intestinal microbiota. main acids consist acetate, propionate, butyrate. concentration butyrate in mammalian intestines varies depending on diet. Its functions use as an energy source, cell differentiation, reduction inflammatory process intestine, defense against oxidative stress. It also plays epigenetic role histone deacetylases, thus helping to reduce risk colon cancer. Finally, affects gut-brain axis crossing brain-blood barrier, making it crucial determine right concentrations for both local peripheral effects. In recent years, there has been significant amount attention given polyphenols promoting human health. Polyphenols play roles protecting health can produce fermentation. This paper aims summarize information key summits related negative correlation between diversity chronic diseases guide future research determining specific activity carry out these vital functions.

Atopic dermatitis (AD) is a severe inflammatory skin disorder, affecting children and adults worldwide, despite the several existing treatments, it necessary to find new alternative topical therapies. Hydrogels may represent good tool treat AD due their high water content, making them excellent candidates for drug delivery vehicles in research. This work aimed develop characterize hybrid hydrogels composed of gel-forming polymers (k-carrageenan polyvinyl alcohol) cutaneous betamethasone (up 0.2 mg mL-1) widely used manage AD, with retention. Bergamot oil menthol essential oils were also incorporated into study effects on penetration retention corticosteroid. Rheological properties revealed pseudoplastic behavior hydrogels, favorable characteristic application. Cytocompatibility towards fibroblasts keratinocytes was determined, revealing safe usage hydrogel blends up 100 mL-1, corresponding 20 µg mL-1 betamethasone, but compromised by presence higher tested concentrations (50 mL-1). This study aims to examine the bioactivity of Calabrian extra virgin olive oil enriched with bergamot fruits (Citrus bergamia Risso & Poiteau) harvested in Reggio Calabria province (Italy). To (EVOO), cv Ottobratica 10 and 20 % fresh fruit was added during crushing olives 2 by infusion freeze-dried (CFVOOB10, CFVOOB20 IFVOOB samples, respectively) added. EVOO, extract flavoured samples (FVOOs), were analysed throughout a one-year period. Total phenol content (TPC) as well total chlorophyll (TChlC) carotenoid (TCC) contents spectrophotometrically determined. In addition, phenolic profile wasstudied UHPLC. Free acidity (FA), peroxide values (PV), spectrophotometric indices, α-tocopherol, colour, antioxidant activity also assessed. The impact addition on lipase, α‐amylase, α‐glucosidase estimated. Expert panellists evaluated influence sensorial attributes, CFVOOB10 found be most pleasant. showed lowest PV highest FA after storage. good protection against lipid peroxidation. Generally, all FVOOs maintained better inhibitory key enzymes related obesity, compared EVOO. Data analyses confirmed that these should considered functional sensory profile.
