Non-satisfactory bread-making quality in wheat, a Tajik staple, hampers food security Tajikistan and calls for plant breeding efforts. Here, methods were searched to study grain protein composition, which is of use improve quality. Size-exclusion high-performance liquid chromatography (SE-HPLC) was used determine composition 22 wheat varieties lines grown two locations, then compared with the specific evaluated using electrophoresis previous results from farmer-grown wheat. As generally showed large variation high-molecular-weight glutenin subunit (HMW-GS) several allelic variants same line, single-seed selection required when this methodology improved quality, such an evaluation willalso result more homogenous composition. SE-HPLC found be suitable tool evaluate current material heterogeneous might advantageous adaptation local future climate. However, easy-to-handle high-throughput methods, e.g., marker-assisted selection, could preferable alternatives studying increased increase Tajikistan.
