Abstract Wheat has been an important part of the human diet for millennia. The increase in demand wheat grown organically United States and globally reflects growing interest organic food products. A symposium on production was held during annual meeting American Society Agronomy Baltimore, MD, 2021. Presenters discussed state‐of‐the‐science research. Papers were solicited following inclusion this special section. As a result, five papers are included section: four focus research North America while one discusses results European study.
