Papaya is a tropical fruit that highly appreciated worldwide for its organoleptic properties and nutritional medicinal value. The optimal quality market requirements determined by genotype, environmental conditions, crop management, as well handling at harvest adequate postharvest conservation. aim of this work was to determine the maturity stage, based on skin color, which papayas grown in Mediterranean greenhouses with active climate control south-east Spain, depending season.
