Mango (Mangifera indica) is a highly valuable horticultural crop known for its quality and productivity. This study investigates the dynamic changes in physicochemical properties glutathione ascorbic acid metabolic pathways mango pulp across various growth development stages over two consecutive years (2021–2022 2022–2023) by transcriptomic analysis. Overall, results demonstrate that during different ripening periods, shows increased levels of total soluble solids, relative conductivity, glutathione, enzymes, while titratable acidity, malondialdehyde, reactive oxygen species, contents decreased. Moreover, analysis identified key differentially expressed genes from validated them with qRT-PCR. In comparisons, 1776, 2513, 828 DEGs were 30 vs. 60, 90, 60 90 days after flowering, respectively. Among them, seven primarily enriched relevant pathways, which included ascorbate peroxidase, oxidase, gamma-glutamyl transferase, transferases, glucose-6-phosphate dehydrogenase. The upregulation these indicates AsA respond well to scavenging species maintain normal functioning plants. research sheds light on molecular mechanisms pulp, providing insights into regulation antioxidant fruit development.

Gastrodia elata is not only a traditional Chinese medicine but also food raw material. very perishable, and its effective constituents decrease significantly. N ‐Acetyl‐5‐methoxytryptamine (melatonin) widely used in the preservation of various fruits vegetables after harvest. In this study, optimal melatonin treatment concentration duration (0.2 mM MT immersed for 3 min) were determined to effectively delay weight loss rate, decay disease severity index .
