As a class of phytosterols, stigmasterols (STIs) and their derivatives are important food additives intermediates, which confer substantial benefits to human health. Here, three novel stigmasteryl phenolates, namely vanillate (VAN), protocatechuate (PRO) sinapate (SIN) were synthesized through the Steglich reaction. In addition, stability was evaluated by differential scanning calorimetry thermogravimetric analysis. HPLC analysis revealed an enhancement in water solubility after esterification with phenolic acid. vitro digestion model, bioaccessibility phenolates significantly higher than that STI. Regarding anti-inflammatory properties, VAN, PRO, SIN exhibit superior effects against TNF-α induced pro-inflammatory responses HK-2 cells compared These results indicate possess improved digestibility terms physical properties STI, as well enhanced functionally.
