Objective Taste is one of the vital indicators for quality evaluation Coptis rhizome (CR), but traditional taste lacks objectivity. By establishing correlation between CR’s tastes and alkaloids, an objective basis was established. Methods Ultra-high performance liquid chromatography tandem triple quadrupole mass spectrometry (UHPLC-QQQ-MS/MS) electronic tongue technique were performed to determine ten alkaloid contents eight from chinensis rhizome, deltoidea teeta japonica respectively. Combined with multivariate statistical analysis, we established models discriminate CR, screened differential alkaloids tastes, Pearson’s analysis on results tastes. Results 1) According previous UHPLC-QQQ-MS/MS method by our research group, four species CR quantified, which jatrorrhizine, columbamine, magnoflorine species. 2) The realized objectification distinguished based aftertaste-A, sourness, bitterness, richness. 3) shows bitterness mainly manifested as aftertaste-B, indicating higher aftertaste-B value, berberrubine content. Astringency aftertaste-A could be suggested indexes due positively correlated or significantly coptisine, epiberberine, berberine, palmatine, Conclusion Electronic has successfully achieved combined quantification research, it provides a new idea CR.
