Background: Euryale ferox seeds (EFSs) serve both medicinal and culinary purposes. They possess high nutritional value are rich in polysaccharides, polyphenols, glycolipids, cyclic peptides, other beneficial components. EFSs known for their effects tonifying the kidneys strengthening essence, invigorating spleen alleviating diarrhea, as well removing dampness leucorrhea. Processing can alter chemical composition of EFSs, with different methods yielding varying on makeup and, consequently, efficacy. However, to date, no studies have systematically investigated overall using processing methods. Methods: In this study, we employed liquid chromatography high-resolution mass spectrometry (LC-HRMS) identify compounds by searching databases Global Natural Products Social Molecular Networking (GNPS), comprehensively explored changes resulting from various via statistical analysis. Results: A total 438 were identified which 283 through database searches 155 GNPS propagation. Statistical analysis revealed 32 38 differential dry-fried (DFEFSs) bran-fried (BFEFSs), respectively. Additionally, found a significant increase lipid content fried EFSs. Conclusions: This study provides valuable data support quality evaluation processed contributes research material basis
