Highland barley β-glucan (HBG) has attracted increasing attention due to its excellent biological activities. However, the effects of HBG on gut flora and metabolites are unknown. Therefore, microbiota during fermentation were analyzed by 16 s rRNA sequencing untargeted metabolomics. The results showed that could enrich microbial diversity, increase abundance beneficial bacteria, inhibit biology pathogenic bacteria. In addition, increased content short-chain fatty acids decreased broth pH. Metabolomics analyses also such as taurine affected amino acid metabolism, among other pathways. This study lays foundation for application in functional foods.
