Societal Impact Statement Reducing cooking time could increase dry beans ( Phaseolus vulgaris ) consumption. Cooking is an essential processing step needed to unlock the nutrients in and make them palatable safe for Long times have consequences bean use, especially where fuel cost high when people prefer foods that are more convenient prepare. Understanding genetic control diversity along with nutritional tradeoffs will help breed nutritious varieties shorter times, thereby making accessible consumers around world. Summary Dry generally require long this influences their utilization acceptability as a food source. Fuel usage, water convenience three constraints associated beans. The of dependent on many factors including growing conditions, post‐harvest handling storage, methods, genotype. While there been significant research endeavors elucidate how storage influence time, has comparatively less regulation time. This review provides in‐depth examination beans, mapping studies its implications breeding purposes. Further, available physiological summarized evaluated context understanding environmental affect current evidence suggests increased by decrease amount soluble compounds cotyledons, but not limited 1) genes abundance calcium‐binding proteins and/or de‐methylesterfied pectins paired inter‐ or intra‐cellular calcium levels (higher can be caused reduced phytate) 2) insoluble condensed tannin/lignin content cotyledon cell walls. Identifying contribute across range environments aid efforts develop reliably fast‐cooking different market classes,
