In this chapter, we explore the vast potential of Portuguese agroforestry biomass as a sustainable source valuable biomolecules. Focusing on extraction, characterization, and valorization compounds, such polysaccharides, phenolics, essential oils from native species like carob, cork oak, aromatic plants or maritime pine, highlight their applications in food, pharmaceutical, innovative bio-based materials. Emphasis is placed eco-friendly extraction techniques functionalization methods to enhance physicochemical properties different biomolecules, thus expanding applicability commercial relevance. By highlighting unexploited diversity biomass, can pave way for an and, platform that not only drive economic growth but also preserve biodiversity, reduce waste, ensure greener more prosperous future.

This study aimed, for the first time, to determine nutritional composition, beta-glucan and ergosterol contents, phenolic compound biological functional activities of a novel mycoprotein produced through bioconversion process Durvillaea spp., brown seaweed. An untargeted metabolomics approach was employed screen metabolites annotate molecules with nutraceutical properties. Two products, each representing distinct consortia co-cultured fungi, named Myco 1 2, were analysed in this study. These demonstrated superior properties compared those showing significant increases total protein (~238%), amino acids (~219%), β-D-glucans (~112%). The contains all essential acids, low fatty acid content, exhibits high antioxidant activity (21.5–25.5 µmol TE/g). Additionally, 2 exhibited highest anti-alpha-glucosidase (IC50 = 16.5 mg/mL), notable anti-lipase 10.5 mg/mL). Among 69 top differentially abundant screened, 8 compounds present relatively concentrations among identified mycoproteins. proteins polysaccharides may play crucial role formation stabilization emulsions, identifying it as potent bioemulsifier. In conclusion, spp. results high-quality protein, value, prebiotic potential due production unique bioactive compounds.
