The unique flavour and quality of Baijiu, a treasure traditional Chinese culture, has attracted increasing attention. pit mud is key component for forming the styles different Baijiu brands. Hence, conducting in-depth research on microbial colonies present in paramount enhancing intricate bouquets flavours. This study conducts comprehensive metagenomic examination ecosystem within Jiang-Nong Jianxiang fermentation mud. Within walls, six prominent species, each accounting more than 1% average relative abundance, emerged as contributors: Lentilactobacillus buchneri, Secundilactobacillus silagincola, Clostridium tyrobutyricum, parafarraginis, Ligilactobacillus acidipiscis, Lactobacillus acetotolerans. Conversely, at bases, four species surpassed this threshold: Petrimonas sp. IBARAKI, Methanosarcina barkeri, Methanofollis ethanolicus, Proteiniphilum propionicum. Notably, abundance walls impart superior saccharifying capabilities compared with those bases. consistently high enzymes belonging to glycoside hydrolases (GHs), glycosyltransferases (GTs), carbohydrate-binding modules (CBMs) across both bases highlight their importance fermentation. composition analysis results underscore important role microorganisms facilitating starch saccharification, ethyl caproate butyrate production, among other aromatic compounds. Microbes residing may be exhibited heightened propensity lactic acid generation, whereas inhabiting displayed stronger inclination towards caproic production. serves valuable reference future endeavours aimed harnessing resources refine optimize methodologies.
