Summary In this study, a lactic acid bacteria strain isolated from oats was used as producer to obtain exopolysaccharide (EPS) using MRS agar plates. The findings indicated that the bacterial identified Weissella cibaria (accession number: PP515290 ) shown have good probiotic activity, adapt better alkaline than acidic conditions, and efficiently produce EPS at concentrations of up 7.93 g L −1 . SEM images showed smooth surface compact particle whereas FTIR confirmed basic functional groups polysaccharides in sample. Meanwhile, XRD analysis demonstrated non‐crystalline amorphous structure thermal two‐phase decomposition with maximum rate 210 °C. Subsequently, W. applied stabiliser set‐type yogurt ( ex situ comparison mixed culture traditional starter (control). results addition 2% significantly improved syneresis (14.31%) compared co‐culture (27.50%) control (29.80%) well increased hardness during 2‐week refrigeration.

This study investigated the potential benefits for juvenile turbot of Pediococcus acidilactici (BCB1H) exopolysaccharide (EPS). Juvenile turbots were randomly divided into three groups (100 per group), and different concentrations BCB1H-EPS added to their feed.
