Enzymatic preparations in juice processing come different formulations, but their enzymatic activities on the stability of this beverage must be studied. This study evaluated five commercial yield and color extraction concerning chemical composition grape juice, color, phytochemicals quantified HPLC. Abstract BACKGROUND Consumer demand for natural products is driving innovation in clean label ingredients. Spine grape ( Vitis davidii Foex), a wild East Asian species, and its fresh juice show great promise as versatile ingredients because of their rich composition. The present study assessed the physicochemical properties metabolite profiles juices from four spine cultivars, exploring application. RESULTS highly depended on cultivar. Total soluble solids ranged 12.43% to 14.27%, whereas organic acid content varied between 5.35 6.85 g L −1 . phenolic 520.17 611.68 mg , anthocyanin fluctuated 72.70 155.54 Metabolite identification using ultra‐high‐performance liquid chromatography‐quadrupole time‐of‐flight mass spectrometry revealed total 116 compounds, including flavonoids, acids, stilbenes, coumarins, amino peptides, lipids vitamins. Among these, 68 compounds well‐known phenolics 11 bioactive peptides that are less extensively researched, contributed biofunctions juices. white ‘Baci’ exhibited highest levels catechin, procyanidines, resveratrol antioxidant peptides. Abstract Background Canopy architecture is critical in determining the fruit-zone microclimate and, ultimately, an orchard’s success terms of quality and quantity fruit produced. However, few studies have addressed how canopy environment leads to metabolomic transcriptomic alterations fruits. Designing strategies for improving pear nutritional components relies on uncovering related regulatory mechanisms.
