The global demand for sustainable and nutritious food sources has catalyzed interest in legumes, known their rich repertoire of health-promoting compounds. This review delves into the diverse array bioactive peptides, protein subunits, isoflavones, antinutritional factors, saponins found primary legume sources—soybeans, peas, chickpeas, mung beans. current state research on these compounds is critically evaluated, with an emphasis potential health benefits, ranging from antioxidant anticancer properties to management chronic diseases such as diabetes hypertension. extensively studied soybean highlighted relatively unexplored other legumes also included, pointing a significant, underutilized resource developing health-enhancing foods. advocates future interdisciplinary further unravel mechanisms action explore synergistic effects. ultimate goal leverage full spectrum benefits offered by not only advance human but contribute sustainability systems. ABSTRACT Uncultivated but abundant soil microorganisms have untapped potential for producing broad ranges of natural products, as well bioremediation. However, cultivating while maintaining a microorganism diversity to enable phenotyping and functional analysis diverse individual isolates possible remains challenging. In this study, we developed tested the ability several culture media formulations that contain defined metabolites or extracts maintain during culture. We also assessed their performance in microfluidic droplet cultivation where single-soil were encapsulated cultivated picoliter-volume water-in-oil emulsion droplets clonal growth needed downstream analyses. Our results show with supplemented by extract enables recovery higher (up 1.5-fold richness) compared bulk methods.
