Post-harvest losses of fruits due to decay and concerns regarding microbial food safety are significant within the produce processing industry. Background/objectives: Propolis (bee glue) is a valuable bee product widely used as natural remedy, cosmetic ingredient, nutritional value enhancer and food biopreservative. The present research aims to investigate the phenolic content, antioxidant activity in vitro anti-inflammatory antitumor potential of six propolis samples from three regions Bulgaria (Vidin, Gabrovo Lovech). Methods: analysis compounds was determined by high-performance liquid chromatography (HPLC); ethanolic extracts assessed 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging assay ferric-reducing power (FRAP) assay; inhibition albumin denaturation method; human metastatic breast cancer cell line MDA-MB-231 using 3-(4,5-Dimethyl -2-thiazolyl)-2,5-diphenyl-2H-tetrazolium bromide (MTT) assay.
