Deer oil (DO) is a potentially beneficial functional oil; however, its sensitivity to environmental factors (e.g., oxygen and heat), difficulty in transport, unfavorable taste hinder practical use. In this study, DO was encapsulated through the cohesive action of soy protein isolate (SPI) chitosan (CS). The optimal preparation conditions yielded microcapsules with DO's highest encapsulation efficiency (EE) (85.28 ± 1.308%) at an SPI/CS mixing ratio 6:1 core-to-wall 1:2 pH 6. Fluorescence scanning electron microscopy were utilized examine microcapsules' structure, showing intact surfaces effective droplets composite coalescence. Through Fourier transform infrared spectroscopy (FTIR), electrostatic interplay between SPI CS verified during merging process. At room temperature, resisted core oxidation by reducing gas permeation. vitro simulated digestion results indicated achieved slow sustained release intestinal tract. This study further expands application scope deer promotes development preparations foods.

Abstract The pathophysiology of diabetes-induced brain injury involves pyroptosis, an inflammatory programmed cell death. This study aimed to investigate the potential protective effect cranberry extract (CE) against injury. Type 1 diabetes was induced by intraperitoneal injection streptozotocin in rats. Brain tissue samples were investigated for biochemical determination reduced glutathione (GSH), superoxide dismutase (SOD), and malondialdehyde (MDA), quantitative RT-PCR gene expression glial cell-derived neurotrophic factor (GDNF), lncRNA GAS-5, pyroptosis markers. ELISA used determine caspase-1 level immunohistochemical staining assessing IL-1β. Prophylactic dosing CE diabetic rats improved cognitive behavior significantly suppressed MDA concentration, genes (gasdermin D caspase 1), GAS-5. In addition, elevated GSH SOD activity, GDNF markedly IL-1β positive stained cells score brain. Phytochemical characterization FT-IR UPLC-PDA-MS/MS revealed cyanidin arabinoside, procyanidins, quercetin, isorhamnetin as key components. protects dysfunction targeting redox-related signaling pathways inducing anti-inflammatory effect. LncRNA GAS-5 downregulation pathway inhibition may contribute its beneficial effects, suggesting therapeutic potential.
