Beverages based on sprouted cereals are an excellent basis for creating new types of functional foods, as they rich in nutrients. made from grains aim to improve daily nutrition, prioritising food safety. The proper storage these drinks depends the processing techniques used, including chemical preservatives and conditions under which stored. Thus, using a mathematical model, this study aimed determine optimal zone beverages raw materials with preservatives. results our showed that optimum temperature citric acid content wheat extract were 2.9% +11°C; barley 2.4% 18°C; triticale 2.2% sunflower 2.8% +14°C; rapeseed 2.7% +16°C; safflower 2.3% +17°C; flax 2.6% soya +18°C; pea chickpea +18°C, respectively. Overall, outcomes theoretically support grains. practical application, it is recommended implement controlled environments temperatures ensure correctly dosed at identified levels enhance shelf life beverages.

The Principles for Responsible Investment in Agriculture and Food Systems (CFS-RAI) are suitable standards contributing to the Sustainable Development Goals (SDGs) area of sound consumption sustainable food. In this context, food banks have demonstrated their significant role supporting vulnerable groups reducing waste through implementation various projects activities. Abstract Ber ( Ziziphus mauritiana L.) commonly known as Indian jujube, is an underutilized seasonal fruit rich in nutrients and consumed directly. A punching type mechanism was developed to separate the seed pulp of ber fruit, based on analysis its physical (length, width, thickness measured by vernier caliper) mechanical properties (cutting extruding forces texture analyzer). The Pearson correlation coefficient showed that parameters (width, thickness, geometric mean diameter, arithmetic diameter) were strongly correlated with sphericity surface area fruits seeds, whereas length not significantly correlated. de-seeding consists a resting seat, rod, guider, crank lever mechanism, supporting stand, handle, base. performance de-seeder analyzed, showing wastage from 1.89% 8.62% efficiency 91.38% 98.11%. indicated (pulp efficiency) are negatively capacity varies 15 – 17 kg/ h 220 280 fruits/ h. reduces labour requirement 67%. Egy kérdőíves felmérés keretében arra kerestünk válaszokat, hogy fogyasztók milyen környezeti szerepvállalást várnak el az élelmiszeripari vállalatoktól. gyűjtött adatok alapján megállapítható, emberek nagy többsége érdeklődik környezetvédelem iránt foglalkoztatja őket klímaválság kérdésköre is. megkérdezettek szerint vállalatok környezet iránti elkötelezettségüket, felelősségvállalásukat leginkább csökkentett károsanyagkibocsátással, termelt hulladékok csökkentésével biológiailag lebontható csomagolóanyag alkalmazásával bizonyíthatják.
