Guidelines for combinations of product characteristics to prevent unacceptable growth Bacillus cereus in foods are lacking, and models therefore valuable predicting these responses. B. isolates dairy origin were used generate a comprehensive dataset develop two cardinal parameter boundary mesophilic psychrotolerant , respectively. Each model incorporated the inhibitory effect 11 environmental factors, i.e., temperature, pH, NaCl/a w organic acids (acetic, benzoic, citric, lactic, sorbic), phosphate salts (orthophosphate, diphosphate, triphosphate), interactions between factors. Cardinal values strain cocktails estimated using 231 203 maximum specific rates ( μ max values), respectively, generated standard liquid laboratory medium (BHI broth). Furthermore, an additional 113 100 dairy-specific (an ultra-filtration permeate from whey) evaluate responses obtained BHI broth. extensive selected conservatively data broth or UF permeate, such that widest range was each factor. Dairy products made of raw milk are associated with hypervirulent L. monocytogenes clonal complexes (CCs) CC1, CC4, and CC6, cause half the reported listeriosis outbreaks in Europe. However, it is currently unknown whether overrepresentation clones dairy conditioned by an alteration native microbiota growth and/or composition. In this study, lag phase, maximal rate, final concentration mesophilic aerobic bacteria from were measured at refrigerated temperature (4 °C) presence absence contamination. The composition dynamics evaluated (CC1, CC6), hypovirulent (CC9 CC121) 4 °C using 16S rRNA high-throughput sequencing. Our results showed that microbial communities naturally present independent contamination hyper- or CCs refrigeration temperature. Pseudomonas was most abundant genus on days 11 21, while Carnobacterium second regardless contaminant CCs. Altogether these suggest CC6 not consequence a differential microbiota.
