Abstract Entomophagy (consumption of insects) has been proposed as one the important solutions to food crisis caused by population growth. Despite a long history insect consumption, numerous challenges have arisen that question feasibility using insects source. It should be notifying Acheta domesticus (house cricket) is recently approved Commission Implementing Regulation (EU) 2022/188 novel ingredient. Gaining comprehensive understanding house cricket paramount for fostering proper appreciation its potential This review aims provide and in‐depth information on cricket, covering various aspects such bioecology, nutritional value, health benefits, harvesting rearing, processing methods use Additionally, consumer acceptance will discussed specific why it gained approval in European Union also provided. The consumption crickets both feed. They are environmentally friendly rear, making them an attractive option human consumption. House particular, holds promise sustainable alternative traditional farming conventional sources due pharmaceutical properties. Different enhance potential. This study investigates consumer preference and acceptance of three meat alternatives—plant-based, lab-grown, insect-based—as sustainable choices to meet the demands a growing population evolving food systems. Insights were gathered from European consumers regarding their perceptions consumption patterns using mixed-methods approach. The approach employed questionnaire followed by focus group discussions conducted in Slovenia UK understand motivations barriers behind responses. chosen as they provided highest response rates have differing legislation. results show that plant-based alternatives are most familiar accepted option, while lab-grown insect-based products less lower rates. Moreover, although sustainability factors important consumers, not only concern; health nutrition primary motivators for choosing alternatives. These closely sensory appeal, pricing, natural, minimally processed options. Based on insights groups, strategies overcome should include targeted product categorisation placement, educational campaigns, effective use media, greater transparency information.

Summary The effect of replacing partially lean meat (21.7% protein, 4.5% fat) with cricket ( Gryllus assimilis ) flour CF in the physicochemical, technological and sensory properties beef patties was evaluated. Four formulations were elaborated, a control 66% w/w (FC) others substitution at 10 (F10%), 15 (F15%) 20% (F20%) levels . Analysis chemical composition, shrinkage, cooking yield, moisture fat retention, pH, colour, lipid oxidation (TBARS), texture profile (Acceptance test CATA questions) performed. An increase content, retention observed products flour. Adding resulted softer lower shrinkage loss. FC lighter redder than TBARS values higher as addition increased, no difference among F10%. F10% had greater acceptance (scores above 8.0 7.0 for overall liking, respectively). By consumers linked descriptors associated such burger aroma, aroma juicy F15% F20% undesirable strange unpleasant bad dry appearance, sandy crumbly. results showed that could replace by fraction up to 10%, obtaining hybrid product appropriate characteristics.

The revolution in biotechnology at the end of 20th century has improved agricultural productivity, reduced environmental impact, and enhanced food nutrition. However, genetically modified (GMF) consumption remains low, particularly European Union, including Spain. This study develops a GMF acceptance model based on Theory Planned Behavior, incorporating five key variables alongside gender age as control factors. Attitude-related include perceived benefit (PB) risk (PR). Perceived factors involve neophobia (PHOB) knowledge (KNOWL) about GMFs. Additionally, subjective norm (SN) is considered. Using sample 728 Spanish consumers, was validated, explaining 70% variance demonstrating strong predictive capability. results so PB, KNOWL, SN positively influence acceptance, whereas PR PHOB have negative effects. PB emerged most influential variables, which are also highlighted priorities importance-performance map analysis (IPMA). Based these findings, strategies been proposed to enhance benefits norms, potentially increasing acceptance. provides valuable insights into consumer behavior offers guidance for policymakers industry stakeholders promote adoption

ABSTRACT Food neophobia inhibits consumer acceptance of insect‐based products due to unfamiliarity and insufficient information. Nevertheless, positive information imagery, emphasizing health benefits hedonic qualities, may lessen these barriers.
