Nowadays, the processing of oleaster low-fibrous aqueous extract which avoids harmful substances and filters fibrous material, due to its emerging applications in nutritional clinical sciences has attracted attention. In this paper, owing high reliance properties on moisture temperature, was concentrated eight levels water content investigate thermophysical properties. The samples' density, viscosity, specific heat, thermal conductivity, surface tension play crucial roles spray drying were measured analyzed using standard procedures instruments. Appropriate correlations are given for each property terms concentration temperature.
