: Aflatoxin M1 (AFM1) is a hepatic hydroxylated metabolite of aflatoxin B1 that found in the milk lactating animals fed contaminated diets. Efficient and safe strategies for degradation or detoxification AFM1 are rare. Given probiotic bacteria known their ability to bind aflatoxins, present study aimed evaluate potential lactic acid bacterial strains, including Lactobacillus plantarum, casei, paracasei isolated from cottage cheese named Khiki, reduction PBS milk. The results showed all selected strains had significant AFM1-binding ability. highest was achieved by (71.35%) (68.53%). assessment over contact time (1 48 hours) with 67% 71.2%, most adsorption occurring within first 12 hours. Since studied were able reduce milk, use dairy industry could be recommended as safety enhancement approach.

Mycotoxins secreted by fungi or molds that infest agricultural products pose a serious threat to the safety and quality of plant-derived foods. Conventional food processing methods frequently face challenges in achieving ideal mycotoxin detoxification. Therefore, novel strategies inspired non-thermal technologies biological resources are emerging as promising alternatives. This review summarizes recent contamination toxicity manifestations common mycotoxins Furthermore, underpinning mechanisms involved current means for detoxification comprehensively reviewed. It also elaborates on research progress made with several removal strains (such lactic acid bacteria, yeast, other microorganisms), well specific enzymes like laccase. Drawing inspiration from practical experience, application limitations, regulatory status treatments detoxification, priority should be given integrating these two methods.
