Introduction The nutritional level of the diet plays a crucial role in maintaining balance yak rumen microbiota. To explore relationship between dietary levels, microbiota, and muscle metabolites, we examined characteristics microbiota metabolome under different levels. Methods Randomly divide 24 yaks with similar body weights, [235.96 ± 12.46 kg], into three groups. These groups were subjected to feeding levels: ad libitum (AL), 70% intake (IR70), 40% (IR40). When AL group gained 70 kg weight, they slaughtered. Results results indicated that (AL) demonstrated superior edible meat quality terms Chroma L*, a*, shear force, compared (IR70) At phylum level, abundance Patescibacteria was notably greater IR40 both IR70 group. genus relative Succinimonas higher than Untargeted metabolomics analysis revealed levels metabolites such as 5-Methylcytosine, Cytosine, Thymine upregulated longissimus dorsi group, which contributed enhancement flavor. Furthermore, Spearman's correlation notable metabolite pH45min is positively correlated trans-Cinnamic acid. Methanobrevibacter exhibited positive concentration 4-(Diethylamino)benzaldehyde, while Candidatus_Saccharimonas showed phenylacetylglycine. Discussion This study provides scientific evidence for understanding impact conditions on quality, related metabolomic pathways. It also reveals potential these factors findings offer important reference information optimizing husbandry management, improving formation beef flavor compounds, their regulatory mechanisms.
