Although eicosapentaenoic acid (EPA) as a functional fatty has shown significant benefits for human health, its susceptibility to oxidation significantly limits application. In this study, we developed nanoemulsion of the lactoferrin (LTF)–EPA complex and conducted thorough investigation macro- molecular properties. By characterizing emulsion with different LTF concentrations, found that 1.0% formed most stable EPA, which benefited formation stability against storage freezing/thawing treatment. As foundation block structure, binding mechanism entire dynamic reaction process have been fully revealed through various simulations theoretical calculations. This study establishes comprehensive picture LTF–EPA across multiple length scales, providing new insights further applications productions emulsion.
