Crystalline aggregates widely exist in organisms. Regulation of the nano structures is vital importance to revelation life secret as well material fabrication. As a representative, chitosan displays polymorphic structures. The transition from hydrated anhydrous allomorph, however, usually involves high-temperature annealing or multi-steps concentrated acid hydrolysis. To address these, we proposed new strategy achieve under mild condition. By subjecting microgels freezing treatment, could transfer into form. XRD results clearly demonstrated that both (020) and (200) diffraction peaks centered at 2θ =10° 19.8° gradually disappeared, while (110) peak =14.8° indicative crystals occurred. Due N2···O6 intermolecular hydrogen bonding hydrophobic association, polymer chains re-organized microcrystalline domains, thereby resulting strong self-assembly for microgels. Moreover, adsorb oil/water interface form Pickering emulsion. obtained macro-porous materials through lyophilization would be used oil absorbent. This work opens avenue facilely regulate structure with controllable manner, facilitating construction more functional materials.

The aim of this study was to create stable, dual Pickering-stabilized double emulsions (DEs) where both the internal and external droplets are stabilized by food grade particles. Water-in-oil (W/O) were using cocoa butter-high oleic sunflower oil based oleogels (CBolg) then W/O emulsion used as dispersed phase in water-in-oil-in-water (W/O/W) emulsions, latter whey protein microgels (WPM). capability CBolg (10 v/v% butter) form subsequently a W/O/W characterized cross-polarized light microscopy, cryogenic scanning electron microscopy (cryo-SEM), confocal (CLSM) static scattering. In addition, characterization WPM's structure evaluated small angle X-ray scattering (SAXS). Results revealed Pickering with droplet size 10 μm could be formed microgel (WPM, 3-5 v/v%) stabilizer. Dynamic (DLS) analysis WPM particles averaging approximately 100 nm, structures consisting partially stretched strands smaller compact subunits along strand (partially folded proteins) confirmed SAXS analysis. DE stable over month formation protective layer around droplets, observed CLSM images, unlike systems non-microgelled protein, destabilized within hours. Such DEs may offer new templates for designing healthy low-fat foods co-delivery nutrients active multiple compartments.

To address these issues, we proposed more convenient strategy achieve transitions under mild conditions. By subjecting microgels (CSM) normal freezing treatment, could be transferred form. X-ray diffraction (XRD) results clearly demonstrated that both (020) (200) peaks centered at 2θ = 10 19.8° gradually disappeared, while (110) peak 14.8° indicated occurrence crystals. Upon freezing, were inserted crystals removed. Meanwhile, effects intermolecular bonding hydrophobic association, adjacent reorganized new microcrystalline domains. Moreover, CSM particles exhibited strong tendency for self-association during this process. introducing oil/water mixture system form Pickering emulsion, resultant macroporous materials used oil absorbent through subsequent lyophilization.
