The food industry is increasingly turning to healthy and eco-friendly alternatives for meat preservation, with recent attention focused on chitosan (CH) essential oils (EOs). Here, we propose two liquid formulations of CH enriched Laurus nobilis or Piper nigrum EOs preserve beef patties stored 4 days at °C from colour changes, secondary lipid oxidation, alteration in volatile organic compound emissions while also preventing oviposition by Calliphora vomitoria loaves hung the same time around 13 a netted polytunnel. Overall, L. EO-enriched solution increased lightness compared control (+7.58%), kept redness yellowness comparable control, maintained level thiobarbituric acid-reacting substances below threshold rancidity perception least 96 h, reduced release ethanol, enhanced fatty woody notes along fresh, green, citrusy aromas specific EO, provided significant protection (88.83%) against blowfly control.
