The large-scale production of soybean proteins results in the generation a significant volume wastewater, containing substantial amount valuable β-amylase. β-amylase enzyme was purified from whey wastewater using three-step process, including alcohol precipitation, ion-exchange chromatography, and gel filtration chromatography. specific activity 29,700 U/mg, with an recovery 17.3% purification fold 16.5. had molecular mass around 56 kDa isoelectric point (pI) value 4.8. exhibited optimal at 55 °C reasonable stability between 30 40 °C. demonstrated optimum pH 6.0 relative range 5.0–8.0.
