The frequency of early frosts has increased in recent years, which are injurious to olive growing, causing losses the yield and quality virgin oil. In this research, it was studied how management agronomic factors mitigates frost damage Arbequina olives, minimizing loss phenols volatiles oil, at different fruit ripening stages. A Box–Behnken design multivariate analysis were performed, with three levels irrigation, potassium fertilization, foliar copper application (15 treatments). Virgin oil extracted from fresh frozen olives. Light caused a significant decrease total secoiridoid compounds antioxidant capacity frost-affected oils, perceived as more pungent had slight defect “frostbitten olives”. According design, an 86% reference evapotranspiration (ET0) or higher 100 oxide units (UK2O) 100% ET0 250 UK2O would be required minimize effect light on volatiles. Partial Least Squares Regression–Discriminant Analysis (PLS-DA) differentiated oils according their stage conditions. Moreover, PLS-DA positively correlated 75–100% 0 Uk2O dialdehydic form decarboxymethyl ligstroside aglycone (p-HPEA-EDA), oleuropein (3,4-DHPEA-EDA), (p-HPEA-EDA-DLA), fruity, pungent, bitter attributes.
