In this study, the extraction and nanoencapsulation of mango peel extract (MPE) were investigated to enhance its stability preserve antioxidant properties. Initially, using central composite design (CCD)-response surface methodology (RSM), optimal conditions for MPE via an ultrasonic system determined be a temperature 10.53 °C, time 34.35 min, ethanol concentration 26.62 %.
