The article is a continuation of the book chapter entitled Recent Advances in Antioxidant Capacity Assays published by IntechOpen 2021. various methods for determining antioxidant capacity variety materials (plant extracts, biological material, foods, etc.) are discussed, with special emphasis on articles recent years and especially reviews. Both chemical cellular assays were presented. In addition to review 2021, following determination presented: crocin bleaching assay, Briggs-Rauscher reaction inhibition ferricyanide-Prussian blue cerric reducing assay Anti Oxidant Power 1 (AOP1) assay. Several applications also presented tabular form.

Ginger (Zingiber officinale Rosc.) is a plant known all over the world that used as spice and an ingredient in drinks, dietary supplements, cosmetics. The growing availability of its fresh rhizomes makes it even more likely to be diet, mainly due beneficial health properties high content polyphenols (gingerols shogaols). main goal motivation authors was assess bioavailability active substances contained extract from ginger presence various types diets using vitro digestion method, enabling simulation processes occurring during absorption metabolites small intestine. For qualitative quantitative analyses, HPLC-MS (High Performance Liquid Chromatography–Mass Spectrometry) HPLC Chromatography) techniques were used, respectively.
