Abstract BACKGROUND Determining the freshness of chilled pork is paramount importance to consumers worldwide. Established indicators such as total viable count, volatile basic nitrogen and pH are destructive time‐consuming. Color change in also associated with freshness. The tracked color changes, which were then used develop predictive models indicators. Compared colorimeters, demonstrated superior stability accuracy data acquisition. Machine learning regression models, particularly random forest decision tree achieved prediction accuracies more than 80% 90%, respectively.
