Abstract
BACKGROUND
Determining
the
freshness
of
chilled
pork
is
paramount
importance
to
consumers
worldwide.
Established
indicators
such
as
total
viable
count,
volatile
basic
nitrogen
and
pH
are
destructive
time‐consuming.
Color
change
in

traditional
detection
methods
using
handheld
colorimeters
expensive,
inconvenient

accuracy.
