Amomum villosum L. is a perennial herbaceous belonging to the ginger family. Due its unique aroma, it widely used in alcoholic beverages and food processing. Unfortunately, issues with bitterness sourness occur, which affect taste quality of processed products. In this study, non-volatile sour bitter substances were systematically isolated, purified, characterized through combination chromatographic separation techniques ultra-performance liquid chromatography–quadrupole time-of-flight mass spectrometry (UPLC/Q-TOF-MS). The results indicate that three compounds (DL-malic acid, protocatechuic p-hydroxybenzoic acid) one compound (catechin) identified for first time vitro anti-tumor activity was screened determined using Cell Counting Kit-8 (CCK-8) assays, 5-Ethynyl-2′-deoxyuridine (EdU) staining experiment, scratch assays. reveal substance catechin (25–100 μg/mL) exhibited significant inhibitory effects, inhibited proliferation migration human non-small cell lung cancer A549 cells dose-dependent mechanisms.
