Selenium is an essential micronutrient which found in many foods and beverages low concentrations. Craft beer, one of the most widely consumed fermented globally, presents a strategic opportunity for selenium intake through organic nanoparticles. This study aimed to confirm presence nanoparticles fermentation process ale-style beer using S. boulardii yeast selenized with Na2SeO3 (74 ppm), spectroscopic analysis TEM. The accumulated 5.92 mg/g dry cell mass, contained 0.642 selenium. UV-VIS detected peak at 300 nm FT-IR wavelength 1398.85 cm−1. particle size ranged between 74 175 nm, maximum ζ-potential −4.2 mV, electrophoretic mobility −0.3492 μm × cm Vs−1, conductivity 2.656 mS TEM revealed that exhibited circular/ovoid shapes. process, combined ingredients used produce ale-type craft proved be feasible method biosynthesis boulardii, offering reliable option developing innovating functional beers.
