Background: Jujube is a homologous herb of medicine and food, polyphenols are key in determining the functional effects jujubes. Methods: In this study, characteristic 15 varieties Chinese jujubes were investigated based on untargeted metabolomics. Results: The results showed that total 79 identified jujube, 55 such as syringetin, spinosin kaempferol reported for first time. Scopoletin (63.94% LZYZ), pectolinarin (22.63% HZ) taxifolin (19.69% contributed greatly presented significant (p < 0.05) differences HZ was characterized by pectolinarin, erianin wogonoside, while XSHZ, NYDZ RQHZ, with similar polyphenol profiles, (+)-catechin, combretastatin A4 tectorigenin. JSBZ, HMDZ, TZ, JCJZ HPZ had profiles galangin, isoferulic acid hydroxysafflor yellow A.
