This
study
aims
to
prepare
and
characterize
cinnamaldehyde-loaded
zein/sodium
alginate
nanoparticles
(ZCNPs)
incorporate
them
into
polyvinyl
alcohol/chitosan
(PVA/CS)
bioactive
films
(PSCN)
investigate
their
compatibility,
physicochemical
properties,
application
as
a
preservation
material
for
pomfret
fish.
The
results
indicate
that
the
anionic
sodium
coating
improved
particle
size,
zeta
potential,
PDI
of
zein
nanoparticles.
ZCNPs
were
uniformly
dispersed
within
films,
enhancing
mechanical
properties
water
vapor
barrier
performance.
X-ray
diffraction
(XRD)
Fourier
transform
infrared
(FTIR)
analyses
confirmed
amorphous
structure
formation
hydrogen
bonds.
In
PVA/CS
film,
with
increase
ZCNPs,
thermal
decomposition
temperature
film
increased
from
298
°C
308
°C,
while
thickness
contact
angle
not
significantly
affected,
remaining
around
0.31
cm
23°,
respectively.
Additionally,
after
incorporation
DPPH
radical
scavenging
rate
14.58
%
95.38
%,
delaying
quality
deterioration
during
storage.
