Abstract. The goal of the research was to evaluate effect a protective coating for tomatoes enriched with Melilotus officinalis extracts pronounced antioxidant activity. Methods. extraction conditions were optimized: dried plant material ground particle size 0.2-0.5 mm, raw extractant ratio 1:100, and time 5 days. content phenolic compounds, flavonoids, activity determined by spectrophotometric methods. Results. obtained using 10% 50% ethyl alcohol demonstrated high phenols (33.7 mg/g) flavonoids (1.74 mg/g), respectively. highest (89.8%) recorded in extract alcohol. study on preservation showed that during storage without cooling, daily weight loss 1.1±0.1% uncoated samples 0.9±0.1% coated samples. During refrigeration storage, less pronounced: after 7 days, difference between 0.7%. first 3 days decreased uniformly all samples, but starting from 4th day, began lose much faster compared treated coating. addition greatest efficiency: cooling cooled state 5.7% 1.7%, respectively, while coating, these figures 7.3% 2.3%. Conclusion. data indicate potential coatings increase shelf life reduce loss.
