Authentication of Protected Designation Origin (PDO) Kalamata olive oil is required to assess its quality in the marketplace compared with other varieties. Given its huge economic, nutritional, and social value, extra virgin olive oil (EVOO) is an essential food. This flagship product of the countries bordering Mediterranean basin one most frauded products worldwide. Although traditional chemical analyses have demonstrated to be reliable tools for drupes EVOO quality assessment, they present several drawbacks; urgent need fast non-destructive techniques thus motivated this review. lack comprehensive reviews in literature, our first aim was summarize current knowledge regarding applying spectroscopies, imaging analyses, other olives EVOO.
