Sarcoplasmic calcium-binding protein identified in Crassostrea angulata (Cra a 4), is stable allergen; the methods to reduce its allergenicity are still limited. The present study aimed develop hypoallergenic enzymatic hydrolyzate of Cra 4 (ECra 4) by enzymolysis. After screening proteases bioinformatics and optimization enzymolysis conditions, ECra was obtained with Trypsin. Further, used stimulate splenocytes from 4-sensitized mice, findings that could CD4+ T-cell proliferation, inhibit IL-4 secretion, promote TGF-β secretion. Spectroscopy analysis revealed destroyed structure 4, which affected allergenicity. Peptidomic B-cell epitopes while retaining epitopes. Overall, hypoallergenicity stimulating ability can be as an immune tolerance product for further study.

Shrimp are highly favored by consumers for their delicious taste and rich nutritional value. However, reports of allergic reactions caused shrimp its derivatives have been increasing, significantly impacting consumer health posing a growing global food safety concern. This article introduces the structure biochemical characteristics major allergenic proteins in shrimp, including tropomyosin (TM), arginine kinase, sarcoplasmic calcium-binding protein, myosin light chain, troponin C, hemocyanin. Currently, there is no effective treatment allergies, prevention mainly achieved avoiding consumption. Conjugation of enzymes to lipid membranes is a key approach reconstitute fascinating features cell organelles and deduce the nature membrane-involved biological events. In this work, papain was covalently conjugated via cross-linker phospholipid vesicles (liposomes) tethered with poly(ethylene glycol) (PEG) at 25 °C pH = 7.0, followed by chromatographic purification.
