Maize
is

fruit
(Hylocereus
spp.),

globally

tropical
fruit,

VOC

Australian-grown
imported
dragon
focusing

volatiles
glycosidically
bound
released

acid
enzymatic
hydrolysis.

Abstract:
Interest
in
glutinous
rice
consumption
has
been
expanding
East
Asia.
However,
the
extent
of
metabolite
variation
between
common
and
not
fully
explored
to
identify
metabolic
targets
for
quality
improvement.
Thus,
objective
this
study
was
provide
insights
into
metabolites
nutraceuticals
rice.
Two
black
(common
rice,
BL-N,
BL-G)
two
white
WH-N,
WH-G)
types
were
analysed
via
LC-MS-based
widely
targeted
profiling.
We
identified
441
343
types,
including
160
key
overlapping
differentially
accumulated
BL-N_vs_BL-G
WH-N_vs_WH-G,
respectively.
Glutinous
showed
a
higher
relative
content
most
categories
metabolites,
except
quinones
(in
BL-N)
tannins
WH-N).
Seven
vitamins,
B6,
B3,
B5,
B13,
isonicotinic
acid,
N-(beta-D-glucosyl)nicotinate,
4-pyridoxic
acid-O-glucoside,
significantly
up-regulated
BL-G
compared
BL-N.
The
biosynthesis
