In order to solve the problems of tuber infection and nutrient loss caused by potato germination during storage, this paper conducted a systematic study using low-temperature plasma jet technology inhibit determine its optimal treatment conditions. This focused on optimizing parameters, including voltage, gas flow rate, time, effectively control germination, reduce weight quality indexes such as hardness, crispness, antioxidant enzyme activity potatoes in storage. The showed that conditions for were voltage 18.05 kV, time 20.21 s, rate 12.79 L/min. Under these conditions, was significantly reduced 31.42%, 2.15%. For convenience operation, parameters validation experiment determined 18 20 13 resultant 31.26%, 2.29%. Compared with blank group, plasma-treated group increased activities enzymes (CAT, SOD, etc.). After 16 days SOD (superoxide dismutase) CAT (catalase) 52.63% 29.27%, respectively, compared control; POD (peroxidase) PPO (polyphenol oxidase) treated 8.69% 18.58%, control. control, hardness brittleness potatoes. Specifically, 6.06% decreased only 24% within days, 37.19% decrease addition, also accumulation sugar dry matter consumption, thus maintaining storage potatoes, which reducing 32.56% 7.66% group. Therefore, reasonable use can slow down sprouting process lays foundation revealing mechanism inhibiting improving quality.
