From Claims to Choices: How Health Information Shapes Consumer Decisions in the Functional Food Market

The
current
study
examines
the
impact
of
health
claims
on
consumer
preferences
and
willingness
to
pay
(WTP)
for
functional
snack
bars,
focusing
anti-inflammatory
antioxidant
properties.
Through
an
experimental
auction
involving
175
participants,
this
investigates
how
providing
clear
information
product
benefits
influences
interest
WTP
while
analysing
role
individual
consciousness
(HC)
in
shaping
these
preferences.
results
indicate
that
detailed
positively
affect
bars
compared
standard
options.
Although
both
attract
interest,
no
significant
difference
was
observed
between
two,
suggesting
similar
perceived
value
distinct
benefits.
However,
highly
health-conscious
consumers
demonstrate
a
stronger
preference
options,
indicating
HC
specific
claim
valuation.
These
findings
underscore
importance
effective
health-related
messaging
promoting
foods
suggest
general
may
resonate
more
broadly
with
than
specialised
ones.
