The emulsification of multifunctional lipophilic and hydrophilic microdroplets in microdevices presents a promising approach to food stability nanomedicine applications. This study introduces novel microfluidic technique using xanthan gum mineral oil within microdroplet structures, integrated into selectively wettability-treated microchannels, facilitate the generation both forms. shear-thinning behavior gum, characteristic feature its polymeric solution, plays challenging role regulating droplet formation stability, especially reverse emulsifications PDMS microchannels. work advances current understanding engineering by proposing versatile for studying effects shear thinning on manipulation multiform droplets.
