Cross-contamination with foodborne microorganisms is a challenge at every stage of food preparation. Listeria monocytogenes poses serious and persistent problems for the industry because its ability to withstand broad range temperatures pH levels thrive under high salt concentrations. These factors significantly increase risks consumers. Although uncommon in general population, bacterium frequently isolated from environmental sources. The prevalence systemic listeriosis notably higher among vulnerable groups, such as elderly, pregnant women, individuals weakened immune systems. Among species within genus, L. most significant contexts capacity proliferation adaptability changing environments. Advancements detection technologies have enabled identification more outbreaks fewer cases per incident. To monitor validate efficacy control measures, robust monitoring programmes are essential. include establishing protocols sampling detection, determining frequency, selecting zones, implementing corrective actions. This study aims review specialist literature on management, surveillance, dairy products.

Listeria species are ubiquitous microorganisms that can be present all over the food chain. They survive under adverse conditions and frequently found in food-processing plants. In this study, 19 innocua welshimeri strains were isolated from meat product manufacturing companies Spain, biofilm formation capabilities analyzed. addition, 37 monocytogenes also isolated, their genetic diversity, capabilities, antibiotic resistance analyzed too. The distribution was similar between two plants Basque Country, while it demonstrated significant variation when compared to three other Valencian Community, Catalonia, Andalusia. Biofilm at both 25 °C °C, with L. showing strong capabilities. Biofilms enhance ability of bacteria persist on surfaces equipment. serogroup analysis indicated differences Country those regions, most belonging serogroups commonly associated human listeriosis cases. Antibiotic multi-resistance a common feature among strains. presence different profiles biofilm-forming highlights importance stringent hygiene monitoring practices prevent spread chain avoid food-safety threats public-health issues.
