This
research
aimed
to
modify
polysaccharides
extracted
from
the
edible
mushroom
Tremella
fuciformis
with
gallic
acid
(GA)
and
complex
them
zinc
ions.
The
functionalities
of
modified
(TFPs)
were
investigated.
Regarding
antioxidant
activity,
TFP-GA
demonstrated
effective
scavenging
activity
against
DPPH
radicals,
nitric
oxide,
hydrogen
peroxide.
Additionally,
exhibited
superior
reducing
ability
toward
Fe3+
enhanced
chelating
Fe2+
compared
unmodified
TFP.
Notably,
conjugate
outperformed
GA
in
Fe2+-chelating
activity.
In
terms
antimicrobial
TFP-GA-Zn
showed
significantly
improved
effectiveness
S.
aureus
E.
coli
TFP-GA.

Owing
to
its
natural
degradability
and
excellent
film-forming
characteristics,
sodium
alginate
(SA)
is
gaining
growing
popularity
in
the
field
of
food
packaging.
However,
insufficient
antioxidant
antibacterial
properties
hinder
application.

research,
protocatechuic
acid
(PCA)
Fe3+
were
utilized
fabricate
a
metal
polyphenol
network
structure.

oil
emulsion
(GEOE)

SA
