Melittin peptide is a short cationic linear derived from honey bee venom with 26 amino acids, demonstrates potential in controlling and eliminating pathogens. In this study, the genetic sequence of melittin was inserted into pcDNA3.1+ plasmid expressed HEK-293 cells His-tag. Purification done through affinity chromatography nickel column. antimicrobial effect beef sirloin first investigated, minimum inhibitory concentration (MIC) determined. Then, combining it nanochitosan (n-CH) coating, (0.1% 0.2%v/v), alone on physicochemical, microbiological, sensory properties examined over 9-day at 4°C. At end storage period, coated samples effectively prevented an increase pH (5.75±0.06) showed significant decrease peroxide value (PV) (4.50±0.07). The most favorable result observed when using n-CH+0.2%M, which led to malondialdehyde level 0.44±0.0.05 mg/kg amount thiobarbituric acid reactant. Additionally, total volatile base nitrogen content treatment involving 0.2%M n-CH+0.2% 0.1%M deemed acceptable. Although viable count (TVC) microorganisms covered increased time (7.88±0.12 CFU/g), microbial growth rate these lower than control sample (12.10±0.13 CFU/g). Therefore, use based edible coatings combination meat packaging reduces population increases its shelf life.

A shellfish processing plant generates only 30–40% of edible meat, while 70–60% portions are considered inedible or by-products. This large amount byproduct waste contains 20–40% chitin, that can be extracted using chemical greener alternative extraction technologies. Chitin and its derivative (chitosan) natural polysaccharides with nontoxicity, biocompatible, biodegradable properties. Due to their versatile physicochemical, mechanical, various bioactivities, these compounds find applications in industries, including: biomedical, dental, cosmetics, food, textiles, agriculture, biotechnology. In the agricultural sector, have been reported promote: growth, defense system, slow release nutrients fertilizer, nutrition, remediate soil conditions, etc. Whereas, biotechnology indicated: enhanced enzyme stability efficacy, water purification remediation, application fuel cells supercapacitors for energy conversion, acting as a catalyst synthesis, review provides comprehensive discussion on utilization biopolymers agriculture (fertilizer, seed coating, treatment, bioremediation) (enzyme immobilization, wastewater synthesis). Additionally, techniques including conventional non-thermal reported. Lastly, concluding remarks future direction provided.
