Fruits and vegetables suffer severe moisture loss during cold storage. To explore the mechanism of water transfer, this study investigated properties konjac glucomannan (KGM)/curdlan (KC) composite films after storage treatment, preservation KC-coated cucumbers, transfer. The results showed that weight, thickness, free content, enthalpy (ΔH) endothermic peak film increased storage, mainly because adsorption diffusion. K6C4 (the KGM/curdlan mass ratio in 6:4) maintained uniform dense lowest dissolution 21.92%. Moreover, content changed by 1.1% on day 15, exhibited excellent gas barrier mechanical properties. These were attributed to optimal matrix formed assembly KGM curdlan K6C4, contributing stability structure performance. coating significantly quality cucumbers. At end firmness weight group 19.3% 24.4% higher than control group, respectively. color, total solid acid, VC for group. low-field nuclear magnetic resonance revealed inhibited transfer from center epidermis cucumbers blocking produced respiration tissues. analysis will contribute understanding inhibiting fruits vegetables.
