The production of Chi-aroma Baijiu generates free radicals, which may pose potential health risks. This study aimed to scavenge radicals in and assess the impact on composition volatile compounds (VOCs) by using distillers’ grains-derived homologous peptides. Five peptides—Pro-Ala (PA), Pro-Val (PV), Gly-Leu (GL), Asp-Phe (DF), Pro-Leu (PL)—were isolated from grain filtrate. These peptides are present trace amounts Baijiu. By supplementing five Baijiu, they could completely hydroxyl radicals. rate scavenging alkoxy ranged 10.84% 35.66%. Furthermore, these had an ethyl nonanoate, diethyl acetal, octanal, were recognized as characteristic compounds. Ultraviolet spectroscopy simulation revealed that highest absorption peaks certain shift when interact with various esters. Those acetate lactate via hydrogen bonding Van der Waals forces, demonstrating their influence VOCs. findings offer new insights into radical scavenging, flavor compound regulation, valorization by-products production.
