This study aimed to investigate the effects of fermentation on physicochemical properties and in vitro antioxidant activities Glycyrrhiza leaf, compare structures unfermented (GLP) fermented (FGLP) polysaccharides, assess their growth-promoting using zebrafish embryos. The results showed that polysaccharide content, extract yield, reduced sugar content leaf increased significantly after 36 h fermentation.
