Entomophagy describes the practice of eating insects. Insects are considered extremely nutritious in many countries worldwide. However, there is a lethargic uptake this Europe where consuming insects and insect-based foodstuffs often regarded with disgust. Such perceptions concerns due to lack exposure availability food-grade as food source driven by neophobia cultural norms. In recent years, accelerating climate change, an urgency develop alternate safe sustainable food-sources has emerged. There currently over 2000 species approved World Health Organization eat suitable for human consumption. This review article provides updated overview potential edible safe, palatable, source. Furthermore, legislation, safety issues, nutritional composition invertebrates including, but not limited, crickets (Orthoptera) mealworms (Coleoptera) also explored within review. discusses insect farming methods upscaling industry regard future prospects Finally, topics addressed areas concern current consumers

Abstract Nowadays, it is urgent to produce in larger quantities and more sustainably reduce the gap between food supply demand. In a circular bioeconomy vision, insects receive great attention as sustainable alternative satisfy nutritional needs. There are numerous challenges facing the modern food and agriculture industry that urgently need to be addressed, including feeding a growing global population, mitigating adapting climate change, decreasing pollution, waste, biodiversity loss, ensuring people remain healthy. At same time, foods should safe, affordable, convenient, delicious. The latest developments in science technology being deployed address these issues. Some of most important elements within this design approach encapsulated by MATCHING model: Meat-reduced; Automation; Technology-driven; Consumer-centric; Healthy; Intelligent; Novel; Globalization. In recent years in Western Europe, studies on entomophagy have drawn the attention of many researchers interested identifying parameters that could improve acceptability insect consumption order to introduce insects as a sustainable source protein into future diet. Analysing factors involved consumer Mediterranean area help their acceptance. A cross-sectional study was conducted using an ad-hoc questionnaire which 1034 consumers participated. The responses allowed us areas relevant acceptance: neophobia, social norms, familiarity, experiences and knowledge benefits. Only 13.15% participants had tried insects. Disgust, lack custom food safety were main reasons for avoiding consumption.
